Need Ideas!

So, I am at a loss as to what to make tonight. Last night we ate out after the kids' dr. appointments and today I have no idea what to do...

Anyone have some ideas for me? :)

Cornbread Bake

Here is a super yummy, super easy tex-mex style comfort food recipe that I love!

*Cornbread Bake*

1 lb. ground beef
1 box cornbread mix (Jiffy works great)
1 tsp. dried oregano
3/4 cup picante sauce (Pace is what I usually use)
1 8oz can tomato sauce
1 16oz can corn
1/2 cup shredded cheese

Preheat oven to 375. Cook hamburger and oregano together until hamburger is browned thoroughly. Drain. Add rest of the ingredients to the hamburger. Mix thoroughly. Spread mixture on the bottom of a pyrex cooking pan. Prepare muffin mix as directed on box and spread over the top of hamburger mixture. Bake 25-30 minutes and let cool for 10 minutes before serving. I usually sprinkle some cheese on top for some more cheesy goodness, or if you like things on the spicier side, I sometimes mix a chopped jalapeno pepper into the cornbread mix. Enjoy!

Chicken Enchiladas with a white sauce

OK this recipe does take a little bit of time but it is SUPER yummy! Bake 6 chicken breasts at 375* for 45-60 min. or until cooked through. After they are cooked cube the chicken and mix with 1 tablespoon of milk, 4oz of cream cheese(softened), and 1 tablespoon of cumin. Roll mixture into flour tortillas(should make 10) and place in a 9x13 glass baking dish. In a bowl combine 1 cup milk, 1 cup sour cream, and 1 can of cream of chicken soup. Pour mixture over Enchiladas, cover with aluminum foil and bake for 30 mins. at 350*. Take out of oven, remove foil, smother with cheddar cheese and put back in oven uncovered for 10-15 mins. to melt cheese.

I usually serve this with a salad or some mexican rice, enjoy!!

2 for the Price of 1

Tonight for dinner we are having Nachos, very simple and not even a recipe, really. Here is how I make them.

1 package of hamburger
Tortilla Chips
Tostitos Jar Cheese
Tomatoes
Olives

I cook up the hamburger and load my chips up with hamburger, cheese and veggies. I may even try black beans tonight, I havn't decided. Anyways, really simple dinner and it sounds yummy!

Here is the recipe I've been meaning to post from last week. Last Thursday I made Chicken Roll-Ups...

Flavorful Chicken Roll-Ups ( I didn't make this much, but you can do with it what you will)

Ingredients:
6 Boneless, skinless chicken breast halves
1 Package sliced part-skim mozzarella cheese (I use shredded because that is what I had)
1/2 cup flour
2 eggs, lightly beaten
2/3 c. seasoned bread crumbs
1/2 c butter, melted
1/2 ts. dried oregano

1. Flatten chicken to 1/3 inch thickness. Place on cheese slice on each piece of chicken and roll up tightly, secure with a toothpick.

2. Place the flour, eggs and bread crumbs in separate shallow bowls. Coat chicken with flour. Dip in egss, then coast with bread crumbs.

3. Place seam side down in an ungreased 2-1/2 qt. bakeing dish. Combine butter and oregano, drizzle over the chicken. Bake, uncovered, at 350 degrees for 40-50 minutes or until chicken is no longer pink. Discard toothpicks.

* It had been my first time trying this but it turned out to be really yummy. I served it with some parm. noodles and corn.

Salsa Chicken!

Tonight my husband has requested one of the easiest, most flavorful dinners, salsa chicken.

What You Need:
- 4 to 6 boneless chicken breasts, thawed (you could use other chicken)
- 1 jar of salsa (whatever kind you like, we use ChiChi's Medium Garden Salsa)
- 8 ounces shredded sharp cheddar cheese

Recommended Sides:
- rice
- egg noodles
- a vegetable if you desire

Put your boneless chicken breasts in a baking dish. Pour some salsa (garden, garlic, etc, hot or medium, your choice!) on them (one jar usually covers 4-6 breasts and serves four people). Cover them in a good blanket of shredded sharp cheddar cheese. Bake the entire thing at 350 degrees for 50 minutes or until the chicken is cooked and the cheese is melted. We serve this with plain, boiled Carolina Gold rice but it is also good with egg noodles or any type of potato. There are veggies in the garden salsa so I usually don't make another vegetable but have made broccoli in the past with this.

Voila, so easy and delicious!!! ( =

What's for dinner?!

Woohoo first post! Just to intro, my name is Kristy, I am 26, married, no kids and I live in NJ. Tonight for dinner I am making BBQ pulled beef sandwiches, broccoli and homemade french fries.

I put the beef (I used a London Broil) in the crock pot this AM, cut up some onions and smothered it and then added BBQ sauce and 1 cup water. I cook it on medium for 9 hours, then I pull it and let it simmer for an hour or so more. It's delious and my husband and I love it. It also makes plenty for leftovers! I just steam some fresh broccoli because we love veggies. The french fries are tradiitonally done, sliced spuds fried in a shallow pan of olive oil until golden brown. I drain and pat them to get rid of any excess oil.

So, what ELSE is for dinner?!

Getting Started

This blog is a group effort. A place that we can post recipes and share meals for anyone who needs an idea for what to make for dinner (or breakfast and lunch). Hopefully we will discover some delicious ideas!

Along with posting recipes, I thought it would be fun to just post what you are making for dinner each day, if you have the time/energy and you can include the recipe with it if you want. Also, if someone posts a recipe and you try it, please comment on that recipe and let everyone know whether or not you liked it! We can also do specific themed meals. IE. Italian recipes, Favorite Dessert, Pizza recipes, etc... and under theme posts we can all post our favorite recipe. There are alot of things we can do with this blog and if you have ideas of how to make it better, please share!

I suppose my thoughts for this is that it acts as somewhat of a message board, not just a blog. Since there will be more than one person posting, it can be pretty interactive. Above all, I just hope it is a fun place to find great recipes and have some fun with cooking!
