OK this recipe does take a little bit of time but it is SUPER yummy! Bake 6 chicken breasts at 375* for 45-60 min. or until cooked through. After they are cooked cube the chicken and mix with 1 tablespoon of milk, 4oz of cream cheese(softened), and 1 tablespoon of cumin. Roll mixture into flour tortillas(should make 10) and place in a 9x13 glass baking dish. In a bowl combine 1 cup milk, 1 cup sour cream, and 1 can of cream of chicken soup. Pour mixture over Enchiladas, cover with aluminum foil and bake for 30 mins. at 350*. Take out of oven, remove foil, smother with cheddar cheese and put back in oven uncovered for 10-15 mins. to melt cheese.
I usually serve this with a salad or some mexican rice, enjoy!!
