Cornbread Bake

Here is a super yummy, super easy tex-mex style comfort food recipe that I love!

*Cornbread Bake*

1 lb. ground beef
1 box cornbread mix (Jiffy works great)
1 tsp. dried oregano
3/4 cup picante sauce (Pace is what I usually use)
1 8oz can tomato sauce
1 16oz can corn
1/2 cup shredded cheese

Preheat oven to 375. Cook hamburger and oregano together until hamburger is browned thoroughly. Drain. Add rest of the ingredients to the hamburger. Mix thoroughly. Spread mixture on the bottom of a pyrex cooking pan. Prepare muffin mix as directed on box and spread over the top of hamburger mixture. Bake 25-30 minutes and let cool for 10 minutes before serving. I usually sprinkle some cheese on top for some more cheesy goodness, or if you like things on the spicier side, I sometimes mix a chopped jalapeno pepper into the cornbread mix. Enjoy!
